Spaghetti Sauce February 28, 2011

This is a recipe I found at eatathomecooks.com and have been in love at first taste.  Now, I am not a huge fan of the texture of onions or tomatoes, so finding a homemade spaghetti sauce has been somewhat of a challenge.  A lot of my recipes I have I usually have to tweak to remove the onions or tomatoes from the ingredients list…..this is one of those recipes.  However, do not write this recipe off tomato lovers; my husband loves tomatoes too, but he is still a big fan of this recipe!!  If you do want to add in some chopped tomatoes or diced onions, by all means be my guest; I would add the onions when you put in the garlic and then just throw some chopped tomatoes in after you have added the tomato sauce.  This recipe is also great to throw in the crock pot and then enjoy when you get home later!!

Ingredients:

  • 1 Tbsp olive oil
  • 4 garlic cloves(minced)
  • 24 oz tomato paste
  • 24 oz water
  • 30 oz tomato sauce
  • 2 tsp basil
  • 2 tsp oregano
  • 2 tsp thyme
  • 2 bay leaves
  • 2 tsp sugar
  • 1 tsp garlic powder
  • salt and pepper
  • 1/4c grated parmesan cheese

Directions:

Heat the oil in a good-sized pot, add the garlic and sautee( and if you must, I suppose you can add onions too), add tomato paste; water; and tomato sauce(and chopped tomatoes, if it makes you happy), whisk until mixed well, add remaining ingredients and simmer for as long you can- preferably, at least a few hours

If you are using your crock pot to make this you will need to sautee the garlic on the stove top, add it to your crock pot, add tomato paste; water; and tomato sauce, whisk, add remaining ingredients, and cook on low all day
